Description Intro: Exclusive organic coffee from the Amazon region in Ecuador, an area known for its rich biodiversity and ideal conditions for coffee cultivation. The combination of fertile soils, optimal altitude and a humid climate contributes to the development of coffee beans with a unique flavor profile. The “Dark” or “Italian” roast is ideal for espresso lovers. The dark roast emphasizes the earthy characteristics, such as chocolate taste, nuts and light smoky notes. With this classic coffee, we deliver Italy, the birthplace of espresso and ristretto, directly to your home. The coffee is freshly roasted for you (hand-roasted) from the date of order. Origin: The coffee comes from the Amazon region of Morona Santiago in Ecuador. It grows at an altitude of 800-1,500 meters above sea level. Coffee from the Amazon region is characterized by a balanced aroma with notes of chocolate, nuts and exotic fruits. Ecuadorian coffee is known for its pronounced floral and fruity notes with a medium body.  Coffee Type & Preparation Process: 100% Arabica (organic quality, without certification). Natural Process (dry processing): the whole coffee cherries are dried in the sun before the pulp is removed. This gives the coffee a fruity and full aroma with more complex flavor profiles. Roasting Level & Preparation: Dark roast, also known as “Italian”. Roasting is completed after the “second crack” (second cracking of the beans) and cooled to room temperature within 5 minutes. This roast is ideal for espresso machines. Waiting Time, Shelf Life & Storage: The coffee should be left to rest for 1 week before use. Freshly roasted coffee contains CO₂, which must first escape (via the valve in the packaging supplied). CO₂ behaves like a protective film and prevents optimum extraction. After a week, the coffee can then be drunk within 1.5 months. The coffee tastes best during this time. We recommend storing the coffee in the bag provided in a cool, dry place (not in the fridge). Flavor analysis: The dark roast brings out the earthy characteristics, such as chocolate flavor, nuts and light smoky notes. Pleasant bitter notes are reminiscent of almonds, marzipan and Italy. A slight sweetness of sugar cane and ripe mangoes round off the taste.
