Description Intro: exclusive organic black tea from Sri Lanka with an earthy and smoky character as well as floral and fruity aromas (magnolia blossoms and dried plums). There is a certain bitter note due to the extremely valuable tannins, such as catechins. Catechins have strong antioxidant properties against free radicals. This high-quality tea is made from the most tender buds. The still young, small leaves are surrounded by fine gray hairs. Hence the name "Silver Tips".Preparation: brew 4.5 g black tea per 100 ml water at 90 °C. Allow to infuse for a maximum of 10 seconds during the first brewing. The brewing time is slightly reduced for small or chopped tea leaves. Due to the high quality of this green tea, up to 6 further infusions are possible. The brewing time can be increased by 3 seconds for each additional infusion. The longer you leave the tea to infuse, the more bitter substances are dissolved.Origin: this precious organic black tea comes from the south of the island of Sri Lanka from the Akuressa region in the southern province of Matara. The area is located in the humid zone of the low hills in the south of Sri Lanka. Temperatures between 28 °C and 34 °C, foggy mornings, mild days and year-round rain are ideal weather conditions for the tea plants to thrive.Tea type: camellia Sinensis. Whole leaves. Black tea (production): this black tea was produced in four stages: Withering, rolling, fermenting and drying. Withering is the uniform removal of water from the fresh tea leaves. There are two types of withering: withering in the sun and withering in rooms with a hot air blower. Rolling is important for the quality and appearance of the black tea. Rolling breaks open the leaf cell and squeezes out the cell sap, which initiates the enzymatic oxidation of the polyphenols, the fermentation. Fermentation is a series of chemical changes triggered by enzymes. This is how the aroma, color and taste of black tea are created. The leaves change color from green to brown/red. After fermentation, the tea leaves are dried in a combustion chamber at 99-104 °C to prevent further chemical changes. This causes the leaf to shrink and darken, resulting in the product known as black tea.Sustainability: Der Schwarztee stammt aus einem biologischen Teegarten, welcher von der Ecocert S.A. zertifiziert ist.Fair Trade: Way back to you trades directly with the tea producer and pays him a fair price, which enables the company to establish itself sustainably. Direct trade avoids unnecessary price increases by middlemen.Sustainable Impact: Way back to you visited the farm on site and gained an impression of the sustainable production. The estate is managed entirely organically. The tea is free of chemicals and pesticides, which enables sustainable production. Flavor analysis: earthy (clay), smoky character with a taste reminiscent of musty wood, henna, sweet potatoes, sugar cane and dried tobacco leaves (Cuban cigars). In the aftertaste, notes of magnolia blossom, dried plums and peach emerge. There is a slight bitter note (orange rind) due to the extremely valuable tannins, such as catechins. Catechins have strong antioxidant properties against free radicals.
