Preparation: brew 3 to 3.5 g tea per 100 ml water at 80 °C. Allow to infuse for a maximum of 15 seconds during the first brewing. Due to the high quality of this green tea, up to 6 further infusions are possible. The brewing time can be increased by 3 seconds for each additional infusion. The longer you leave the tea to infuse, the more bitter substances are dissolved.Origin: this precious green tea comes from the south of the island of Sri Lanka from the Akuressa region in the southern province of Matara. The area is located in the humid zone of the low hills in the south of Sri Lanka. Temperatures between 28 °C and 34 °C, foggy mornings, mild days and year-round rain are ideal weather conditions for the tea plants to thrive.Tea type: Camellia Sinensis. Young whole leaves. Green tea (characteristics): during green tea production, the processes of fermentation and oxidation are prevented in order to preserve the natural active ingredients of the freshly plucked leaf. Around 400 different ingredients of green tea are now known. These include: caffeine, polyphenols/tannins (such as catechins), flavonoids, theophylline, saponins, essential oils, carotene, vitamins (C, B1, B2, B5, B7, B10, B12, E, P, K), fluorides, iron compounds, potassium, sodium, magnesium, calcium, strontium, copper, nickel, zinc, minerals and trace elements (such as phosphorus, molybdenum), enzymes etc. Sustainability: the tea comes from an organic tea garden that is certified by Ecocert S.A.Fair Trade: Way back to you trades directly with the tea producer and pays him a fair price, which enables the company to establish itself sustainably. Direct trade avoids unnecessary price increases by middlemen.Sustainable Impact: Way back to you visited the farm on site and gained an impression of the sustainable production. The estate is managed entirely organically. The tea is free of chemicals and pesticides, which enables sustainable production. Flavor analysis: mineral-rich, creamy character with a taste reminiscent of grass, moss, bread, artichokes and vanilla. The aftertaste has notes of elderflower, pomegranate and dried apricot. There is a slight bitter note (orange zest) due to the extremely valuable tannins, such as catechins. Catechins have strong antioxidant properties against free radicals.
